This Vegan Mug Cookie is the recipe you’ve been waiting for! A cookie that is deliciously refreshing with a sweet but tangy lemon flavour bursting through every bite! The previously mentioned cookie is a wonderfully healthy, vegan keto dessert that you can make in a matter of minutes!

As you know- many of my recipes are accidental happenings, that turn into something totally different then it’s intended purpose! Well rest assured that this vegan mug cookie is no exception- it in fact started out as what I hoped would be a mug cake but once I was cooked it suddenly wasn’t cake like at all but rather more of a cookie/biscuit like dessert! Nevertheless it was still wonderful.

Vegan Mug Cookie/Biscuit – Lemon Drizzle

An easy sweet and tangy dessert that you can make in minutes! Vegann, Keto and Gluten Free!

  • 3 tbsp almond meal
  • ½ tsp baking powder
  • 1 tsp fine coconut flakes (shreds) unsweetened
  • 1 tbsp Krisda Stevia Sweetener
  • 1 tsp psyllium husk
  • 1 tbsp lemon juice
  • 1 tsp coconut oil (melted)
  • 1 tiny pinch sea salt
  • ¼ tsp lemon zest


  • – Lightly grease a small ramekin
  • Next mix all your dry ingredients together in a bowl
  • Mix all of your wet ingredients in a separate bowl
  • Mix the wet and the dry ingredients together and pour into your ramekin
  • Microwave for about 1-2 mins until done and slightly crispy
  • Top with icing and more lemon zest if you so choose.

Lemon Vegan Mug Cookie/Biscuit

I don’t know about you but I feel like Lemon Desserts always make me reminiscent about the summer time I don’t know whether it’s the freshness of the lemons taste + scent or if it’s the bright hues of the lemon reminding me of all the sunshine associated with the summer!

Speaking of summer… It may be March – mid March but summer is still so far off here in the Northern part of the world! We are still having very cold temperatures and some major snowfalls making it hard to imagine summer or even spring for that matter for a very long time! I’m praying it comes sooner than expected!

And in that day living waters will flow out of Jerusalem, half of them toward the eastern sea and the other half toward the western sea; it will be in summer as well as in winter Zechariah 14:8
