These Vegan Lemon Poppy Seed Cupcakes are made in a miniature silicone cupcake mold but I have a feeling you can make them any size and they will be amazing! These Cupcakes may be mini but they sure pack a Mighty Punch with their Bright Lemony Flavour!
It was a Pleasant Surprise that my family also really enjoyed these Vegan Lemon Poppy Seed Cupcakes too! The cupcakes were moist and dense… sweet and a very tiny bit tangy pretty much the perfect texture and taste! I think I will have to make these again really soon!
Tips and Tricks to Make this Recipe Great!
Just some General Tips when making these Vegan Lemon Poppy Seed Cupcakes:
– If you can’t find Poppy Seeds where you live then you can try and substitute hemp seeds instead ( I hear chia seeds may work too but I have yet to try these substitutes)
– If you are planning on using a Silicone Mold to bake these cupcakes in then be sure to very lightly grease it first, this will just insure the cupcakes don’t stick!
