Vegan Keto Key Lime Pie Bars – A No Bake, Super Easy to make Sexy Summer Dessert. A No bake Recipe with a pecan (no date) crust and a coconut cream almond and lime filling. The recipe that is a whole lot sweet and just a bit tart as the lime shines through!!

When I say this Vegan Keto Key Lime Pie Dessert is Easy – I mean it!! To make this key lime pie bar you basically prep the ingredients, Blend, Pour, Chill and Devour!

You will want to Share this dessert and that is only because not sharing this dessert may just make it too tempting to eat the WHOLE thing by yourself in one sitting… and let me tell you it’s way too many calories for one day!

Ingredients

Crust :

  • 2 tbsp coconut flour
  • 1 cup pecan halves
  • 1 tbsp coconut oil
  • 2 tbsp  @krisdasweetener Krisda Stevia

Filling :

  • 1/2 cyp sliced almonds (soak them for at least 5 hours if you don’t have a high speed blender)
  • 1/2 cup coconut cream
  • 2 tbsp coconut oil
  • 1/2 cup  @krisdasweetener Krisda Stevia this one is amazing-organic and NO bitter after taste yay
  • 1/2-1/3 cup fresh squeezed lime juice

Instructions

Crust Instructions:

  • – Pulse crust ingredients in a processor until it because crumbly
  • Place crust in a dish that has parchment covering the bottom
  • Chill in the fridge while you make your filling! (-The crust recipe is one I adapted from the lovely @megbiehn and @mostlyveganketo Please go check out their original recipe )

Filling

  • Blend all ingredients in a high speed blender and pour on top of your crust!
  • – Place in the fridge or freezer until you Key Lime Bars are solid!
  • Zest the rind of a lime for the top of your bars, slice and enjoy!
