Vegan Keto Berry Crisp Recipe

This Vegan Keto Berry Crisp was my first attempt at a Keto Crisp so… it’s not perfect but it actually did turn out pretty delicious! The Crisp is sweet from the Krisda sweetener but also tangy because of the raspberries = the perfect combo! The buttery topping has been crumbled lightly over the sweet and tangy berries and then topped with some vegan coconut cream, all coming together to make a delicious dessert or heck .. maybe even breakfast?

The inspiration for this recipe came from my brother a while back when he was home. I wanted to create a dessert he would want to try and this vegan keto berry crisp seemed to be the best idea! My brother devoured the dessert in minutes which was a pretty encouraging to see!

Vegan Keto Berry Crisp Recipe

A simple to make berry crisp that can be served as a dessert or maybe even breakfast? This is a Vegan Keto Berry Crisp that is also Gluten free and Soy Free!

Ingredients

  • 1 cup Fresh or Frozen Raspberries (mashed with a fork slightly)
  • 1 tbsp Krisda Monk Fruit Sweetener!
  • 1 tsp Lemon Juice
  • 1/2 tsp Xanthan Gum (to thicken the berries)
  • 6 tbsp Almond Meal
  • 1 tsp Flax Seed Ground
  • 1 tbsp Coconut Oil
  • 1 tsp Vanilla Extract

Instructions

  • Preheat oven to 350
  • Place your berries in an oven safe dish and mash with a fork and then stir in the sweetener, lemon juice and xanthan gum and spread evenly into the bottom of your dish
  • In separate bowl add your almond flour, flax seed, vanilla and coconut oil and crumble ingredients with your hands until well combined.
  • Once your topping is crumbly, sprinkle it on top of your raspberries.
  • Place the raspberry crumble in your heated oven and cook for 20 to 40 mins ( this will really depend on your oven and how brown you want it.
