It’s going to sound crazy but I actually made this mozzarella cheese on accident! Believe it or not I was really just trying to make some sort of vegan cream cheese or something along those lines but instead I ended up making an easy vegan mozzarella – see friends not all accidents are bad haha!
Tips on How to make your Easy Vegan Mozzarella as Delicious as Possible!
When it comes to using almond meal in your recipe… I’d suggest using an almond meal that is as clump free and fine as possible so your cheese is nice and smooth! Alternatively you can soak some blanched almond slices overnight and then drain, and blend them until they are completely smooth!
Sorry friends but YES the Xanthan Gum is essential for this Easy Vegan Mozzarella Recipe! I had a feeling someone would ask so I thought I would address it right away! The xanthan gum helps largely with the texture and gives it that cheesy gumminess!
Lastly before we get to the recipe – Keep in mind that cheese isn’t solid but rather more of a spreadable cheese which is why it’s perfect for pizzas, stuffed mushrooms, lasagnas and much more!

I recommended Blanched Almond Slices and a Coffee grinder because that’s how I like to make more almond meal for recipes! I choose blanched almond versus almonds with skins because i think the blanched have a nicer texture in recipes like these!
