Mexican Zucchini Lasagna A Unexpected yet Delicious Recipe
This Mexican Zucchini Lasagna is cheesy, noodly, meaty and saucy… yet it is actually dairy free, low carb, gluten free and completely vegan! This lasagna makes a great meal to create ahead and freeze for a busy day!
A Mexican Zucchini Lasagna in our house means that I was too lazy to use a can opener + open a can of tomato sauce / spaghetti sauce -So yes I indulged in my laziness … I instead just used Salsa …. an easy to open jar of salsa! haha
You know what? This Mexican Zucchini Lasagna was actually really great! The thin sliced zucchini did a great job acting as lasagna noodles, the vegan almond mozzarella cheese and the beyond meat crumbles gave a nice protein texture!

Mexican Zucchini Lasagna Recipe!
Mexican Zucchini Lasagna – Keto + Vegan Recipe
- 1 medium Zucchini
- ⅓ cup Salsa
- 1 cup Beyond Meat Veggie Crumbles (sauteed with onions before assembling lasagna)

- 1/4-1/2 cup Nutritional Yeast (optional)
- 1. Preheat Oven to 400℉
- 2. Line oven safe dish with parchment
- 3. Thinly slice Zucchini lengthwise
- 4. In parchment lined dish layer Zucchini, Salsa, Veggie Crumbles and Cheese until you get desired amount of layers
- 5. Sprinkle Nutritional Yeast on top or in between layers
- 6. Cook in the oven for 20-30 minutes
- 7. Enjoy!!!!
Also I’m curious to know but does anyone actually read all of the text and stories people put in their recipes? I know the times I am looking for a recipe I rarely ever stop to read the text and stories on someone’s recipe page- instead I go straight to the recipe!
