These Keto Vegan Pancakes are super simple to make, with only a few ingredients and in only a few minutes you will have the perfect breakfast! Get your sugar free syrup and other favourite pancake toppings out and let’s get cooking!

Recipe tips for the perfect Keto Vegan Pancakes:

Anytime I make a recipe with almonds to replace the flour, I will tend to use almond meal instead of almond flour! I use almond meal because I grind the almonds myself and I can never get it as fine as flour! Just thought you should be mindful not to get the two mixed up because the meal is seemingly more absorbent then the flour and I didn’t want you to use flour and have goopy keto vegan pancakes!

If you’re wondering why these Keto Vegan Pancakes included Xanthan Gum it’s mainly for the texture and Xanthan Gum helps with the thickness of the pancakes! I have yet to make these pancakes without it but I will try it soon and report back -because I know not everyone has this ingredient on hand!

Lastly when it comes to tips I would just say to : add in your milk slowly to your batter – so you can get the right thickness according to your preferences! If you want super keto vegan pancakes then add more milk and if you want thick pancakes add less!

  • 1/2 cup Almond Meal
  • 1 tsp Coconut Flakes – unsweetened or coconut flour
  • 1/2 tsp Baking Powder
  • 1 tbsp Psyllium Husk
  • 1 tbsp Krisda Monk Fruit Sweetener
  • 1/2 tsp Xanthan Gum
  • 1/2 cup Cashew Milk (or any plant based milk)


  • -Mix all of your ingredients together and allow to thicken
  • -Heat a non stick pan and allow the pan to get hot before pouring 1/4 cup of the batter on the pan.
  • -When you put the batter on the pan you will have to spread it out a bit with a spoon because the batter is thick
  • -Cook the pancakes over medium low heat and flip when the tiniest bit of bubbles appear.(pancakes are quick to cook)


Let’s talk about toppings for these Keto Vegan Pancakes! I feel like toppings are just as important as the pancakes themselves! hehe Some idea’s for these Pancakes are: Sugar Free Syrup, Shredded Coconut, Berries, Nut Butter, Cinnamon, Chocolate Chips, Hemp Hearts (for some extra protein) Dairy Free Butter – Basically anything you like! I also think if you omit the sweetener you could even eat these as a savoury dish!!
