Fast Keto Sandwich Bread – This 5 Ingredient Bread only takes 5 minutes to make – since 5+5 =10 then it must mean this bread is a 10 on the delicious scale right? That’s logic if you ask me!

The other great part about this bread is the fact that it is completely nut free, gluten free, keto and of course Vegan! One thick slice of this bread is 212 calories and 3 Net Carbs, perhaps a bit more carby than some other of my bread recipes because of the coconut flour BUT I still think it’s pretty respectable!

Fast Keto Sandwich Bread

A bread that is super easy to make – you can even make it in the microwave and best of all it tastes great!

  • 1/4 cup + 1 tbsp warm water
  • 1 tsp olive oil
  • 1 tsp baking powder
  • 2 tbsp whole flax seed
  • 2 tbsp coconut flour


  • Lightly Grease a glass dish (rectangular dishes are ideal for a traditional sandwich shape)
  • Place your flax seed and coconut flour in a grinder and grind until there are no chunks
  • Place blended flour into a bowl and mix in a pinch of salt and baking powder
  • Mix 1/4 cup of warm water and your olive oil together
  • Mix your wet ingredients into your dry (if mixture is too dry add in 1 tbsp of water more )
  • Place dough into your greased dish and slap bottom of the dish to make sure your dough fills the bottom
  • Microwave dough for 2 minutes and see if it is cooked through – if not place in the microwave again for another 1 minute
  • Recipe makes one thick slice – repeat recipe for a second slice of bread


Don’t Over cook this bread because it can get dry quickly!!! Also I do think you could pop these in the oven to cook as well BUT I have yet to try it!! Let me know if you do!

I’ve actually found many great ways to use this fast keto sandwich bread! You can toast it in a pan, use it for avocado toast, cheese melts, for nut butter and berries or savoury toppings – it’s so versatile!

I ended up making some avocado toast with the fast keto sandwich bread and for a little twist I sprinkled some of Crazy Good BBQ RUB Spice and it was perfect!!! I’m actually obsessed with this spice mix – it’s SO flavourful and the smoked undertones just scream summer!!

Some of you who follow My Instagram Account may already know I ended up making a meatball sub using this fast keto sandwich bread and it was delightful! I marinated some light life meatballs in a tomato sauce, melted some vegan cheese on the bread and on top of the meatballs and VOILA a masterpiece was born haha!
